Mother’s Day is a very special occasion for it celebrates how amazing our moms are and for the simple fact that we owe them our lives. Preheat oven to 250 degrees F. Line a baking sheet (you might need more than one) with heavy-duty aluminum foil and place ribs on the foil. Sprinkle dry rub on both sides of the ribs and pat the spices into the meat. Put in oven and bake for about 2 hours and 15 minutes. A few minutes before the time is up in the oven, light the grill. Take the ribs out of the oven, slather with barbecue sauce, and finish them on the grill for 7 to 10 minutes. Allow to cool before serving.

Makes 2 quarts
4 cups seedless watermelon, chopped
1/2 cup freshly squeezed lime juice
1/4 cup sugar
2 cups freshly squeezed lemon juice
1 cup sugar
2 cups water
Puree the watermelon, lime juice and sugar in a blender until smooth. Set aside.
In a small saucepan, combine lemon juice, sugar and 2 cups water.
Bring to a boil and stir 2-3 minutes, or until sugar dissolves. Let cool.
Mix the lemon syrup with the watermelon mixture. Serve over ice.
Spike with your favorite vodka or tequila, if desired.
